Opie'S Clam Supreme - cooking recipe

Ingredients
    2 medium eggplants
    1 Tbsp. minced onion
    1 tsp. salt
    Ritz cracker crumbs
    5 Tbsp. butter or margarine
    1 (8 oz.) can minced clams
    1/2 c. milk
Preparation
    Peel and slice eggplant; add onion and salt.
    Boil until tender but not mushy; drain, mash and add 2 tablespoons butter. Drain clams, reserving juice.
    Butter a casserole dish.
    Layer alternately eggplant, clams and Ritz crackers, ending with crumbs. Blend the milk with clam juice. Salt to taste and pour over mixture.
    Dot with 3 teaspoons butter.
    Bake at 350\u00b0 for 30 minutes.
    Serves 6.
