Lemon Muffins - cooking recipe
Ingredients

1 c. flour
1/4 tsp. salt
1/2 c. sugar
3 Tbsp. lemon juice
2 Tbsp. sugar
1 tsp. baking powder
1/2 c. butter
2 eggs, separated
1 Tbsp. lemon rind
1/4 tsp. cinnamon
Preparation

Mix flour, baking powder and salt.
Cream the butter and sugar. Add egg yolks.
Add flour mixture alternately with lemon juice. Beat egg whites until stiff. Fold into batter with lemon peel.
Fill lightly greased muffin pan 3/4 full.
Mix cinnamon and sugar. Sprinkle 1/2 teaspoon over each muffin. Bake at 375\u00b0 about 25 minutes.
Makes about 10 muffins.
