Fried Green Tomatoes Or Eggplant - cooking recipe

Ingredients
    1 eggplant or 6 green tomatoes
    1 egg, beaten
    flour
Preparation
    Peel eggplant or cut off ends of green tomatoes; cut into thin slices.
    Soak eggplant for 10 minutes in salted water.
    Dip in egg; roll in flour.
    Fry in hot oil in skillet until brown.
    Drain on absorbent paper; serve.
