Lemon Meringue Pie - cooking recipe
Ingredients

1/4 c. cornstarch
2 Tbsp. flour
1 1/3 c.sugar
1/4 tsp. salt
1 1/2 c. boiling water
3 eggs, separated
1/3 c. lemon juice
3 Tbsp. butter
1 lemon rind, grated
baked 9-inch pie shell
6 Tbsp. sugar
Preparation

Mix cornstarch, sugar and salt into pot double boiler.
Add boiling water; blend and cook, stirring constantly until thick. Beat egg yolks and stir into mixture.
Cook 2 more minutes. Remove from heat.
Add lemon juice, butter and rind from lemon. Mix well and cool.
Beat egg whites until stiff, adding 6 tablespoons sugar gradually.
Swirl over pie filling and bake in moderate oven at 350\u00b0 for 12 to 15 minutes until golden brown.
