Quick Hoppin John(6 Servings) - cooking recipe

Ingredients
    2 1/2 c. water
    1/3 c. chopped onion
    salt
    1/2 tsp. Tabasco
    1 c. regular rice (short or long grain)
    1 (15 oz.) can black-eyed peas, drained
    3 slices cooked bacon, crumbled or 3 Tbsp. real bacon bits
Preparation
    Heat water, onion, salt, Tabasco and rice to boiling.
    Cover and cook 20 to 25 minutes (use timer).
    Stir in remainder of ingredients and let stand 10 minutes.
    Eat immediately.
