Creole Cauliflower - cooking recipe
Ingredients

3 c. cooked chopped cauliflower
2 c. mashed cooked tomatoes
1/2 green pepper, chopped
1 onion, chopped
4 Tbsp. butter or margarine
2 Tbsp. flour
1/2 c. shredded cheese
salt and pepper to taste
Preparation

Melt butter in saucepan; add onion and green pepper and brown lightly.
Blend in flour, stirring, then add tomatoes, salt and pepper.
Heat to boiling point and cook three minutes, stirring constantly.
Add cauliflower and heat through. Place mixture in casserole, top with cheese and bake at 350\u00b0 until cheese melts and is lightly browned.
