Black Beans-Cuban Style - cooking recipe

Ingredients
    1 lb. dried black beans
    1 whole bay leaf
    1 green pepper, cut in quarters
    1 large onion
    1 tsp. minced garlic
    1/2 c. red wine vinegar
    ham hock (optional)
    salt and pepper
Preparation
    Soak black beans overnight in cold water.
    In morning, rinse beans and cover with fresh water in crock-pot.
    Add all ingredients except salt, pepper and vinegar.
    Cook until tender, then season with salt and pepper.
    Add vinegar and cook for 1/2 hour more.
    Serve over white rice.
