Miniature Cornmeal Muffins - cooking recipe
Ingredients

2 c. cornmeal
1 tsp. baking soda
1 tsp. salt
2 large eggs, lightly beaten
2 c. buttermilk
2 Tbsp. butter, melted
vegetable cooking spray
Preparation

Combine first 3 ingredients in a large bowl; make a well in center of mixture.
Combine next 3 ingredients; add to dry ingredients, stirring just until moistened.
Place miniature paper baking cups into miniature (1 3/4-inch) muffin pan.
Coat inside of paper cups with cooking spray.
Spoon batter into cups, filling 3/4 full.
Bake at 400\u00b0 for 18 minutes or until lightly browned. Yield:
4 dozen.
