Pecan Watercress Salad With Pears And Bleu Cheese(Source: Santa Fe Recipe) - cooking recipe

Ingredients
    2 bunches watercress, washed, dried and stems removed
    2 ripe Bosc pears, cored and julienned
    1/2 c. Bleu cheese, crumbled
    1/8 c. pecan nuts, chopped
    1/4 c. balsamic vinegar
    2/3 c. good olive oil
    1 dash white pepper
    1/3 tsp. salt
Preparation
    Arrange the watercress in a circle in the center of a large plate.
    Fan out the julienned pears around the edges.
    Sprinkle the salad with the Bleu cheese and pecans.
    In a small bowl, place the vinegar, olive oil, white pepper, sugar and salt.
    Whisk everything together until the dressing is well blended.
    Dribble the dressing over the salad.
    Serves 4.
    Easy to make; very tasty!
