Mediterranean Couscous Salad - cooking recipe
Ingredients

1 c. plus 2 Tbsp. vegetable stock
3/4 c. quick-cooking couscous (many supermarkets carry Far East brand)
1 large tomato, seeded and chopped
3 oz. Feta cheese, cut into 1/4-inch dices
3 Tbsp. minced arugula or 1/4 c. minced watercress
3 Tbsp. minced green onion
5 Tbsp. olive oil
3 Tbsp. fresh lemon juice
salt and freshly ground pepper
romaine lettuce leaves
Greek or Nicoise olives
toasted pine nuts
Preparation

Bring stock to boil in small saucepan.
Mix couscous.
Cover and remove from heat.
Let stand 5 minutes.
Fluff couscous with fork.
Turn into medium bowl.
Cool to room temperature.
