Hungarian Goulash - cooking recipe

Ingredients
    2 lb. onions, chopped
    2 Tbsp. fat
    1 small tomato, chopped
    1 small green pepper, chopped
    2 large raw potatoes, diced
    1 1/2 lb. chuck beef, cubed
    1 tsp. tomato paste
    2 tsp. salt
    1 c. boiling water
    1 Tbsp. paprika
Preparation
    In a large pot, cook onions in fat until golden.
    Add tomato, pepper, paprika, beef, tomato paste and salt.
    Cook, stirring over medium heat, until beef loses its redness.
    Reduce heat; add water. Cover and simmer for 1 1/2 hours.
    Remove meat.
    Strain gravy, then return to pan with meat.
    Add potatoes and simmer until tender, about 1 hour.
    Makes 4 to 5 servings.
