Ingredients

1 large eggplant
1 clove garlic
2 Tbsp. water
1/4 c. sesame seed paste (tahini)
olive oil
1 tsp. salt
1/4 c. lemon juice
parsley (for decoration)
Preparation

Preheat oven to 375\u00b0.
Wash and remove stem of eggplant. Pierce with a fork about 5 times.
Place in a baking dish.
Bake for 45 minutes or until tender.
Remove from oven and run under cold water.
