Garden Linguine - cooking recipe
Ingredients

2 Tbsp. olive oil
1/2 c. butter
3/4 c. chopped green onion
2 cloves garlic, minced
1/2 lb. mushrooms, sliced
1 medium zucchini, sliced
2 medium carrots, julienned
1 c. snow peas, sliced 1/2 diagonally
1 lb. (in season) asparagus, trimmed and sliced or broccoli is nice touch
1/2 c. chicken broth
1 c. heavy cream
2 Tbsp. minced fresh basil or 1 tsp. dried
2 Tbsp. minced fresh parsley
1/4 tsp. pepper
1/4 tsp. salt
9 oz. linguine, cooked and drained
1 c. freshly grated Parmesan cheese
Preparation

In large skillet, heat oil and butter.
Stir in vegetables and simmer until tender.
Stir in broth, cream, basil, parsley, salt and pepper.
Simmer for 3 to 4 minutes.
In heated serving dish, toss linguine with vegetable mixture and Parmesan.
Serve immediately.
