Baked Eggplant - cooking recipe

Ingredients
    2 eggplant
    1 onion (medium), chopped
    2 stalks celery, chopped
    1 tomato, chopped
    1 c. small shrimp
    seasoned bread crumbs
Preparation
    Peel, dice and parboil eggplant.
    Saute onion, celery and shrimp in olive oil.
    Add tomato and cook.
    Season with salt, pepper, a dash of Tabasco sauce, a dash of Worcestershire sauce and 1 bay leaf. When all are blended together, fold in the eggplant.
    Place in baking dish. Top with seasoned bread crumbs. Bake at 350\u00b0 for about 20 to 25 minutes.
