Pecan Pie Muffins - cooking recipe
Ingredients

1 c. pecans, chopped
1 c. brown sugar, firmly packed
1/2 c. all-purpose flour
2 large eggs
1/2 c. butter, melted
Preparation

Combine first three ingredients in a large bowl. Make a well in the center of mixture. Beat eggs until foamy. Stir together eggs and butter. Add to dry ingredients, stirring just until moistened. Coat muffin pans with cooking spray. Spoon batter into cups, filling 2/3 full. Bake at 350\u00b0 for 20 to 25 minutes or until done. Makes 1 dozen large muffins or 2 dozen small ones.
