Ratatouille - cooking recipe

Ingredients
    1 medium onion, sliced
    1 small green pepper (1/2-inch slices)
    1/3 c. oil
    1 clove garlic, finely chopped
    1 small eggplant, peeled and cut into 3/4-inch pieces
    1/4 c. V-8 or tomato juice
    2 medium tomatoes, cut in 1/8ths
    1 medium zucchini, cut in 1/2-inch slices
    1 tsp. each: basil and parsley flakes
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    In 3-quart casserole, combine onion, green pepper, oil and garlic.
    Cover with lid.
    Cook at High 4 minutes.
    Stir.
    Add remaining ingredients; stir.
    Cover.
    Cook at High for 18 to 20 minutes.
    Stir twice.
    Let stand, covered, 5 minutes before serving.
