Ingredients

1/3 c. butter
1 c. sugar
1 egg
1 tsp. coconut extract
1 pkg. Martha White spud flakes
1 pkg. Martha White biscuit mix
Preparation

Preheat oven to 375\u00b0.
Cream butter and sugar together until light and fluffy.
Add egg and coconut extract.
Beat well.
Shape dough into 3/4-inch balls.
Arrange 2 inches apart on ungreased baking sheet.
Bake 10 to 14 minutes, or until golden brown.
Cool on wire rack.
Makes 48 cookies.
