Old Fashioned Peach Preserves(These Are Very Good!) - cooking recipe
Ingredients

2 qt. sliced, peeled, hard ripe peaches
6 c. sugar
Preparation

Combine fruit and sugar well.
Let stand 12 to 18 hours in a cool place (I use the refrigerator).
Sterilize canning jars and lids.
Begin cooking peach mixture on medium until boiling.
Stir frequently and be careful not to scorch!
Boil gently until fruit becomes clear and syrup thick.
As mixture thickens, remember to stir frequently to avoid scorching.
Skim off foam if necessary. Pour hot preserves into hot jars, leaving 1/4-inch headspace.
Wipe jar rims and put on lids.
Put jars upside-down on a cabinet (out of a draft) for about 30 minutes.
Then set upright and let cool.
