Turkey With Eggplant - cooking recipe

Ingredients
    1 eggplant, cut in shoestring strips
    boiling water
    1 lb. turkey breast steak, cut in strips
    1 Tbsp. cornstarch
    2 Tbsp. soy sauce
    1 Tbsp. sherry wine
    4 Tbsp. oil
    5 hot peppers, shredded fine
    1 small clove garlic, chopped fine
    1 Tbsp. fresh ginger, chopped
    1/2 c. chicken stock
Preparation
    Cover eggplant with boiling
    water; let stand 5 minutes and drain well.
    Dredge
    turkey meat in mixture of cornstarch, soy sauce and sherry.
    Heat pan; add oil and saute hot peppers until they turn color.
    Remove
    from pan.
    Saute turkey in the same pan until done.
    Add
    eggplant,
    garlic, sauteed peppers, ginger and soup stock.
    Heat thoroughly.
    Makes 6 servings.
