Oven Fried Zucchini(Serves 4) - cooking recipe

Ingredients
    vegetable cooking spray
    3 Tbsp. herb seasoned bread crumbs
    1 Tbsp. Parmesan cheese
    1/2 tsp. garlic powder
    1/2 tsp. black pepper or crushed red pepper flakes
    2 medium unpeeled zucchini
    2 tsp. vegetable oil
    2 Tbsp. water
Preparation
    Preheat oven to 475\u00b0.
    Spray nonstick cookie sheet liberally with cooking spray.
    Combine bread crumbs, cheese, garlic powder and pepper on sheet of waxed paper and set aside.
    Quarter zucchini lengthwise, then cut each spear in half or thirds.
    Put in plastic bag; add oil and water.
    Close bag and shake to coat spears.
    Roll each spear in crumb mixture until lightly coated. Arrange spears on cookie sheet in single layer.
    Bake in a 475\u00b0 oven for 6 minutes and then broil for 1 minute until spears are lightly browned and tender-crunchy.
