Summer Squash And Peppers - cooking recipe

Ingredients
    3 medium summer squash (yellow) sliced thin
    1/2 large red pepper, diced
    1/2 green pepper, diced
    1/2 sweet onion, diced
    2 strips bacon
    1 to 1 1/2 c. croutons, garlic and onion flavor
    Salt and pepper to taste
    1 or 2 Tbsp. butter
Preparation
    Simmer squash and peppers in a cup of water, covered.
    Remove from heat and drain while there is still some body to the squash. Meanwhile, fry bacon and cook the onion in bacon fat until transparent.
    Drain some of the bacon fat, leaving some of the onions for flavoring.
    Crumble bacon and add bacon and onion to squash mixture; then stir in the croutons.
    Pour into a casserole dish and heat in oven at 350\u00b0 for 15 minutes.
    Serve hot.
