Italian Chicken Salad - cooking recipe

Ingredients
    1 whole chicken breast (1 lb.)
    4 c. bite size pieces salad greens
    1 c. cherry tomato halves
    1 small red onion, cut into single rings
    1/2 c. small pitted ripe olives
    6 radicchio or lettuce cups (optional)
    1/4 lb. Mozzarella or Monterey Jack cheese, cut into strips
    1 (2 oz.) can anchovies, drained (optional)
Preparation
    Place chicken breast skin side up in ungreased square 9 x 9 x 2-inch baking pan; cover tightly.
    Bake in a 350\u00b0 oven until done, about 1 hour.
    Prepare with Italian dressing.
    Toss with greens, tomatoes, onion and olives; arrange in radicchio cups.
    Arrange chicken, salami and cheese on greens mixture.
    Garnish with anchovies.
    Serve with breadsticks, if desired.
