Coq Au Vin(Chicken With Wine Sauce) - cooking recipe

Ingredients
    4 chicken breasts, skinned (boneless if you choose)
    1 1/2 c. onions
    2 cloves garlic, squashed
    1/2 lb. mushrooms or 1 can mushrooms
    1 1/2 c. dry white wine
    3 Tbsp. olive oil
    5 to 6 sliced carrots
    4 Tbsp. flour
    4 Tbsp. parsley
    2 tsp. marjoram
    1 tsp. thyme
    1 c. water
Preparation
    Brown chicken in oil and remove from pan.
    Brown carrots, onions and garlic until onions are soft and carrots are crisp-tender.
    Stir in 1 cup wine and 1 cup water.
    Stir in flour/parsley mixture until smooth.
    Add salt and pepper to taste. Replace chicken and simmer about 45 minutes to an hour.
    If using fresh mushrooms, add during last 1/2 hour of cooking.
    If using canned mushrooms, add during last 15 minutes.
    Just before serving, add last 1/2 cup wine and turn up heat to boil.
    Serve over white rice.
    This recipe is easily doubled or tripled.
