Luau Racks Of Lamb - cooking recipe
Ingredients

2 (2 to 2 1/2 lb.) racks of lamb
1 (2 1/2 to 3 lb.) pineapple or 1 (1 lb. 4 oz.) can sliced pineapple packed in its own juice
1/4 c. firmly packed brown sugar
1 tsp. each: dry mustard, ground ginger and soy sauce
Preparation

Place lamb, fat side up, in a shallow roasting pan.
Insert a meat thermometer into thickest portion of meat without touching bone.
Roast, uncovered, in a 375\u00b0 oven for about 45 minutes or until meat thermometer registers 125\u00b0.
