Sweet-Potato Fritters - cooking recipe

Ingredients
    1 lb. sweet potatoes, coarsely shredded
    1 small onion, coarsely shredded
    3 large eggs
    3 Tbsp. all-purpose flour
    1/2 tsp. salt
    1/4 tsp. pepper
    vegetable oil for frying (1/4 c.)
Preparation
    Spread potatoes and onion on clean dish towel; roll up, twisting to get moisture from vegetables.
    In bowl, whisk eggs, flour, salt and pepper until smooth.
    In large nonstick skillet, heat oil over medium heat.
    Add vegetables to batter; mix.
    Spoon mixture into skillet (1 heaping tablespoon).
    Flatten slightly. Fry 4 minutes, turn and cook 2 to 4 minutes.
    Drain on paper towels; keep warm while frying others, adding oil if necessary. Makes 6 servings.
