Kale Soup - cooking recipe

Ingredients
    2 lb. soup bones
    1 c. chopped onion
    1 1/2 tsp. salt
    1 clove garlic
    6 to 8 c. water
    1 1/2 lb. linguica
    1 lb. fresh kale, shredded
    2 c. raw potatoes, cubed
    1 can red kidney beans
Preparation
    Simmer soup bones, onion, salt and garlic in water for about 2 hours.
    Slice linguica into \"coins.\"
    Add to soup pot and simmer another half hour.
    Add kale, potatoes and beans.
    Continue to simmer until potatoes are tender (about 20 minutes).
    Remove bones.
    Can be cooled so fat can be removed.
    Even better, let soup mellow for a day before serving.
