Danish Potato Salad - cooking recipe

Ingredients
    1/4 c. vinegar
    1/4 c. water
    1/4 c. sugar
    1/4 tsp. salt
    dash of pepper
    1 tsp. mustard
    5 c. cubed, cooked potatoes
    2 hard-boiled eggs
    1/2 c. chopped cucumber
    1 Tbsp. minced onion
Preparation
    Combine first 6 ingredients and bring to a boil.
    Reduce heat and gradually beat in 2 well-beaten eggs.
    Cook, stirring constantly, until slightly thickened, about 5 minutes.
    Beat in 1 cup salad dressing.
    Pour cooked dressing over potatoes, eggs, cucumber and onion.
    Stir; add additional salt and pepper, if desired.
