Heaven And Earth - cooking recipe
Ingredients

2 lb. potatoes, pared and cubed
1 tsp. salt
2 lb. apples (Jonathan, Winesap), pared and sliced
7 slices bacon
1 c. chopped onions
Preparation

Cook potatoes in 1 cup boiling water with 1 teaspoon salt in a large covered pan until almost tender.
Stir in apples.
Continue cooking over low heat, stirring occasionally, until apples are tender and crisp. Fry bacon until crisp. Remove from skillet and crumble into bits; keep warm.
Fry onions in bacon fat until light brown.
Keep warm.
Mash apple-potato mixture with a large spoon, leaving in large lumps. Toss with half of the bacon and onion. Place in serving dish and sprinkle the remaining bacon and onions. Keep warm.
Serves 6 to 8.
