Granola Carrot Cake - cooking recipe
Ingredients

1/2 c. butter or margarine
3/4 c. firmly packed brown sugar
2 eggs
2 c. grated carrots
3/4 c. all-purpose flour
1/2 tsp. soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 c. granola cereal
Preparation

Microwave butter in a 2 1/2-quart glass mixing bowl at High 30 seconds.
Blend in brown sugar.
Beat in eggs.
Stir in carrots, flour, soda, baking powder, salt, cinnamon, nutmeg and granola cereal.
Grease the bottom only of an 8-inch round baking dish.
Pour batter into dish; microwave at High 7 to 8 minutes. Rotate dish at 3 minute intervals.
Cool thoroughly before frosting with Cream Cheese Frosting.
Serves 6 to 8.
