Low-Fat Quick Mexican Skillet - cooking recipe

Ingredients
    12 oz. ground turkey
    1 1/2 c. chopped onion
    1 1/2 c. chopped celery
    1 1/2 c. chopped green peppers
    2 Tbsp. taco seasoning mix
    3 c. stewed tomatoes in juice
    1/2 c. water
    4 oz. converted rice
    3 oz. grated Cheddar cheese
Preparation
    Brown vegetables in nonstick Pam sprayed large skillet until onions are tender (approximately 5 minutes).
    Add turkey and cook until pink is gone.
    Add seasonings.
    Mix tomatoes, water and rice.
    Cover and cook for 20 to 25 minutes on low simmer.
    Stir occasionally until rice is done.
    Add cheese and heat until melted.
    This makes a big skillet.
    Makes 4 servings.
