Corn Meal Muffins - cooking recipe
Ingredients

3/4 c. flour
3/4 c. corn meal
3 tsp. baking powder
2 Tbsp. sugar
3/4 tsp. salt
1/4 c. melted shortening
1 c. milk
1 egg, well beaten
Preparation

Sift flour into mixing bowl.
Add the next 4 ingredients and re-sift.
Combine shortening, milk and egg.
Mix well.
Pour all at once into center of dry ingredients.
Stir quickly until dry ingredients are just dampened.
Then stir 3 or 4 times more. Batter will not be smooth.
Spoon quickly into greased muffin pans.
Fill about 2/3 full.
Bake about 25 minutes in a 425\u00b0 oven or until golden brown.
Serve hot with butter.
