Squash Stir-Fry - cooking recipe

Ingredients
    2 Tbsp. vegetable oil or peanut oil
    1 clove garlic, minced
    1 large onion, sliced and separated into rings
    3 medium zucchini, thinly sliced
    3 medium size yellow squash, thinly sliced
    3 tomatoes, cut into wedges (optional)
    3/4 tsp. salt
    1/2 tsp. pepper
    1 c. shredded American cheese
Preparation
    Pour oil into iron frying pan or hot wok, coating sides until bottom is covered with oil.
    Add garlic and onion; stir-fry 1 minute.
    Stir in zucchini and yellow squash.
    Cook 2 to 3 minutes or until crisp-tender.
    Add tomatoes (optional), salt and pepper. Stir well.
    Sprinkle cheese over vegetables, stirring just until cheese melts.
    Yields about 6 servings.
