Chicken Dijon With Artichokes - cooking recipe
Ingredients

8 chicken breast halves, skinned and boned
4 Tbsp. flour
1 c. evaporated skim milk
1 (14 1/2 oz.) can artichoke hearts, drained and sliced
6 Tbsp. liquid reduced fat butter mix
2 c. chicken broth
4 Tbsp. Dijon mustard
Preparation

In large nonstick skillet sprayed with vegetable spray, saute chicken in liquid butter mix over low heat.
Remove from pan.
Add flour and stir over low heat until smooth.
Add more liquid butter mix, if dry.
Stir in broth and skim milk.
Add mustard.
Add artichoke hearts and simmer chicken in sauce for 30 minutes. Serve over rice or noodles.
