Ingredients

1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
3/4 tsp. ground cardamom (optional)
1/4 tsp. ground cinnamon
1/2 c. butter, softened
3/4 c. light brown sugar
1 egg
1/2 tsp. vanilla extract
1 c. grated carrots
1 c. chopped pecans
1/2 c. raisins
Preparation

In a bowl, combine flour, baking powder, baking soda, salt, cardamom and cinnamon; set aside.
In a second bowl, beat butter with brown sugar until light and fluffy.
Add egg and vanilla extract and beat well.
Add flour mixture in 2 or 3 batches.
Stir in carrots, pecans and raisins.
Drop by tablespoons, 2 inches apart onto lightly greased cookie sheet.
Bake in 325\u00b0 oven for 20 to 25 minutes.
Makes 3 dozen.
