Zucchini Casserole - cooking recipe
Ingredients

6 c. shredded zucchini
3/4 c. shredded carrots
1 c. light sour cream
1 box corn bread dressing (except 1 c. for top of casserole)
1 can cream of chicken soup (98% fat-free)
1/2 c. chopped onions
4 Tbsp. butter (optional)
Preparation

Mix all ingredients together and put in casserole dish sprayed with Pam. Put reserved stuffing on top of dish and bake at 350\u00b0 for 30 minutes. You can sprinkle light cheese on top when done baking, before serving.
