Eggplant Patties - cooking recipe

Ingredients
    1 eggplant
    1 egg, beaten
    1 c. self-rising flour
    1 chopped onion
    salt and pepper to taste
Preparation
    Peel eggplant.
    Cut in 1-inch pieces.
    Cook in salt water until tender.
    Drain and mash.
    Add egg, flour, onion, salt and pepper. Mix well.
    Spray skillet well.
    Cook at medium-high heat, turn once.
    When browned on both sides, remove from heat.
