Sourdough Bread - cooking recipe

Ingredients
    7 c. fresh ground rye flour
    7 c. fresh ground whole wheat flour
    2 cartons plain yogurt
    2 pkg. Fleischman's yeast (prove yeast in 1/8 c. warm water and 1 tsp. sugar)
    1 Tbsp. salt
    3 c. skim milk
    3 Tbsp. olive oil
Preparation
    Combine all ingredients and knead vigorously and long.
    After a few minutes, it should form a ball that holds together.
    If sticky, add flour, a handful at a time.
    If too dry and stiff, add skim milk.
    Use either a kneader pot or by hand on a floured board.
