Pan-Browned Potatoes - cooking recipe

Ingredients
    1/4 c. olive or salad oil (I used olive)
    2 Tbsp. butter or margarine
    8 large all-purpose potatoes, pared and quartered
    2 c. boiling water
    1 small red pepper, chopped
    1 small green pepper, chopped
    1/2 c. thinly sliced green onions
    1 clove garlic, minced
    1 tsp. salt
    1/2 tsp. pepper
    1/4 c. chopped parsley
Preparation
    In a large, heavy skillet, over medium-high heat, heat oil and butter.
    Add enough potatoes to make a single layer in skillet. Cook, turning occasionally, until golden brown, about 10 minutes. Transfer to a boil; repeat with remaining potatoes.
