Zucchini Torta - cooking recipe

Ingredients
    2 lb. zucchini
    1 onion, chopped
    3 medium size eggs
    2 Tbsp. chopped basil
    2 Tbsp. chopped parsley
    1 3/4 c. cooked rice
    1/2 c. bread crumbs
    1/2 to 3/4 c. grated Parmesan cheese
    2 Tbsp. olive oil
    salt and pepper
Preparation
    Slice zucchini and chop onion.
    Parboil for about 15 to 20 minutes. Drain well. Cook Minute rice. Add all above ingredients and mix well. Save some grated cheese for top of torta. Bake at 350\u00b0 for 30 minutes in a 9 x 13-inch glass oblong dish. Remove from oven when top of torta is golden brown. Cool well before serving and cut into squares.
