Hominy With Chipotle - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 large onion, minced
    3 to 4 cloves garlic, minced
    1 c. chopped tomatoes
    1 to 2 chipotle peppers in sauce, chopped (canned, available in Mexican food section) or 1 tsp. tomato paste
    29 oz. can hominy, rinsed and drained
    salt and pepper to taste
    1 to 2 c. grated Jack cheese
Preparation
    Preheat oven to 375\u00b0.
    Saute onion in olive oil 1 minute.
    Add garlic; cook 2 more minutes.
    Stir in tomatoes, chipotle peppers and a little of the sauce.
    These are hot; if you can't stand the heat, use 1 teaspoon tomato paste instead.
    Cook 5 minutes.
    Stir in hominy, salt and pepper.
    Remove from heat.
    Stir in cheese, reserving 1/2 cup for the top.
    Place casserole in the oven and reduce heat to 350\u00b0.
    Bake for 45 minutes.
    Let stand for 5 minutes before serving.
    Serves 4 to 6.
