1 c. flour
1 tsp. sugar
1/2 tsp. salt
3/4 tsp. baking powder
1/2 tsp. baking soda
1 egg
1 c. buttermilk
Preparation

Sift together flour, sugar, salt, baking powder and baking soda.
Beat the egg and buttermilk and combine with sifted ingredients with several swift strokes.
Do not overbeat.
For thinner pancakes, add a little more buttermilk.
