Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant, peeled and drained
    1 large onion, diced
    1 c. soft bread cubes
    3/4 c. grated Cheddar cheese
    2 egg yolks
Preparation
    In
    medium
    saucepan,
    boil
    eggplant
    and onion for 10 minutes
    in
    about 2-inches of water.
    Drain thoroughly.
    Beat egg yolks
    with
    wire
    whisk, pour over bread cubes and gently mix and let
    stand
    for a few minutes.
    Add cheese, egg yolks and bread to drained eggplant and onion.
    Mix gently but well. Turn into greased
    8
    x 8-inch pan.
    Bake at 350\u00b0, uncovered, for 35 to 45 minutes, until lightly browned on top.
