Rice Pudding - cooking recipe

Ingredients
    3 qt. milk
    3 eggs
    1 c. sugar
    1 c. rice (Carolina preferred)
    1 tsp. vanilla
    cinnamon (optional)
Preparation
    Mix all ingredients in a large pot.
    Bring to a boil, slowly, stirring often.
    Continue to simmer for approximately 1 hour (stir often), until milk begins to thicken.
    Remove from stove.
    Stir in vanilla.
    Cool and sprinkle with cinnamon, if desired.
