Pepper Relish - cooking recipe

Ingredients
    6 c. green and red peppers, drained
    3 c. onions
    3 c. vinegar
    1 Tbsp. salt
    3 c. sugar
Preparation
    Quarter peppers and onions and chop finely in food processor. Drain well.
    In large pot cover onions and pepper with boiling water.
    Let stand 20 minutes.
    Drain and press remaining water out. Make syrup with vinegar, sugar and salt.
    Add pepper and onion mixture to syrup.
    Cook for 20 minutes at slow boil, stirring occasionally.
    Seal in hot sterilized jars.
