Hens Reggae - cooking recipe

Ingredients
    2 c. chicken broth
    1 can cream of chicken soup, undiluted
    1 1/2 c. (10 oz. pkg.) yellow rice with saffron seasoning
    2 green onions, chopped
    2 Cornish hens, split in half lengthwise
    salt and pepper to taste
Preparation
    Spray a 3-quart casserole well with a nonstick spray.
    Whisk broth and soup until smooth.
    Stir in rice and onion and mix well. Remove fatty pads and skin, if desired.
    Arrange hens, cut side down on top of rice mixture.
    Season with salt and pepper.
    Spray a sheet of tinfoil and cover the casserole dish.
    Bake at 350\u00b0 for 1 1/2 hours.
