Fritter Batter - cooking recipe

Ingredients
    2 egg yolks
    1/3 c. water
    1/3 c. evaporated milk
    1 Tbsp. lemon juice
    1 Tbsp. melted butter
    1 c. bread flour, sifted before measuring
    1/4 tsp. salt
    2 Tbsp. sugar
    1/8 tsp. salt
    2 egg whites
Preparation
    Mix egg yolks, water and milk.
    Add lemon juice and melted butter.
    Resift flour, salt and sugar.
    Combine the liquid and the dry ingredients with a few swift strokes.
    Add 1/8 teaspoon salt to the egg whites.
    Whip them until they are stiff.
    Fold them into batter.
    Fry the fritters until they are a golden brown. Sprinkle with some confectioners sugar before serving or top with your favorite jam or jelly.
