Confetti Scalloped Potatoes - cooking recipe

Ingredients
    1/2 c. margarine
    1/2 c. chopped onion
    1 can cream of mushroom soup
    1 c. (4 oz.) shredded Cheddar cheese
    1 small green pepper, chopped
    2 Tbsp. (1 oz.) pimento
    1 (16 oz.) pkg. hash browns (unfrozen, by egg department)
    1 soup can milk
    salt and pepper
    1 c. cheese cracker crumbs, divided
Preparation
    In a skillet, saute the onion in margarine. Stir in potatoes, soup and milk.
    Add cheese, green pepper, pimento, salt, pepper and half of the cracker crumbs.
    Pour into casserole and top with remaining crumbs.
    Bake at 375\u00b0 for 40 minutes. Serves 6 to 8.
