Low Calorie Company Casserole - cooking recipe

Ingredients
    3 c. cooked long grain wild rice (6 oz. box)
    2 Tbsp. diet margarine
    3 Tbsp. plus 1 tsp. cornstarch
    1 1/2 c. evaporated skim milk
    12 oz. chicken broth
    18 oz. chicken, cooked and cubed
    1 Tbsp. parsley flakes
    1/4 c. chopped green pepper
    1/4 c. chopped onion
    1 tsp. salt
    dash of pepper
Preparation
    In pan, mix cornstarch, salt and pepper.
    Stir in milk and broth until smooth.
    Add margarine and onion, stirring constantly. Bring to a boil over medium heat.
    Boil 1 minute or until thick. Stir in chicken, green pepper, parsley and cooked rice.
    Place in 2-quart casserole dish, sprayed with Pam.
    Bake, uncovered, at 375\u00b0 for 30 minutes.
