Zucchini Casserole - cooking recipe
Ingredients

3 c. sliced zucchini
1 medium onion, sliced
1 c. cracker crumbs
1 1/2 c. grated Cheddar cheese
2 eggs, beaten
1/2 c. water or chicken broth, tomato sauce or skinned, diced tomatoes

Preparation

Mix eggs and liquid.
Save 1/2 cup cheese for top.
In well-buttered casserole, layer zucchini, onions, crackers, pepper and cheese.
Repeat until all is used.
Pour egg mixture over top. Sprinkle cheese and bake at 350\u00b0 for 1 hour.
