Carrot Bran Muffins - cooking recipe
Ingredients

1 c. bran flakes cereal
1/3 c. skim milk
2 egg whites, lightly beaten
2 tsp. vegetable oil or applesauce
1 tsp. lemon juice
1 tsp. baking powder
1 c. grated carrot
1 c. raisins
1/2 tsp. ground cinnamon
1 c. cinnamon applesauce
1 c. whole wheat flour
1/2 c. all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
2 Tbsp. brown sugar
Preparation

Combine cereal and milk in small bowl; let stand 5 minutes. Combine whole wheat flour, all-purpose flour, baking powder, soda, salt, cinnamon and brown sugar in bowl; make a well in center. Combine cereal mixture, egg, oil, applesauce and lemon juice.
Add to dry ingredients, stirring just until moistened.
Stir in grated carrot and raisins.
Spoon into lightly vegetable oil sprayed muffin pans (2/3 full).
Bake at 400\u00b0 for 15 to 20 minutes or until lightly browned.
Remove from pans immediately.
